Peach & Blackberry Cobbler

It's raining, it's poring. I'm literally snoring!! My family is not the type to stay cooped up inside the house. So all of this tropical storm rain has been tampering with our summer. Since my sweet boyfriend reads my blog I can't post the Father's Day crafts we created today, I did however bake an extremely delicious peach and blackberry cobbler.

Ingredients:

  • 1/2 cup unsalted butter (I used vegan butter)
  • 1 cup all-purpose flour
  • 1 cup coconut sugar, divided
  • 1 tablespoon baking powder
  • Pinch of sea salt
  • 1 cup lactose free milk
  • 4 cups fresh peeled  peach slices
  • 1 cup fresh blackberries
  • Ground cinnamon & ground ginger

Preheat your oven to 375.
Melt your butter in a 13- x 9-inch baking dish.

Combine flour, 1 cup coconut sugar, cinnamon, ginger, baking powder, and sea salt. add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).

Bring remaining 1 cup coconut sugar, peach slices, and blackberries  to a boil over high heat, stirring constantly; pour over batter (do not stir).

Pour into batter, again do not stir.

Let bake for 40-45 minutes then let cool & enjoy!

Stitches.

Well! It's finally happened! Last night I was cooking a giant delicious meal of seasoned pork ribs, green beans, macaroni & corn. I was using the can opener to open the corn when it jammed.   So I thought "I can just pop this open with my hands" pshhh.

So  now I have stitches & a sore arm from a tetanus shot at the ER. This goes down in my parenting  book for sure.

B2L Alternative Shoot with Eric Alaniz

This was my first shoot and it couldn't have gone more beautiful. We knew we wanted artsy, beautiful & bloody but this absolutely blew my mind. The creative process was so organic. I hope you guys enjoy these as much I do!!

Where the Wild Things Are Party!!

The party was a blast & not to mention a huge success! All of the decorating, crafting & planning paid off. I wish I had more photos but I was soaking wet 98% of the party so I didn't have my phone or camera in hand.

This was the main table:

The cake topper is just Max printed out & cut on thick paper.

Photo props:

We had the movie during food & present opening

Jasper in the toddler moon jump

Water slid, moon jump, toddler pool, water balloons, there was something for everyone!!

He was grouchy by this point & hated his raccoon tail!! Ha! His face says it all

I snap chatted a few videos of the decorations (before they were finished, idk what I was thinking lol) so here are those videos.

What's happening now.

Wow! It's been a good minute since I've used my my little writing outlet. How is everyone doing? Life is all kinds of insane, but ...
